If you’re looking for a cozy, flavorful treat for the holidays or the cold season, try this Gingerbread Loaf. This version, inspired by a popular coffeehouse recipe, delivers warm spices, moist texture, and a perfect balance of sweetness.
For extra depth we used a caramel apple butter from our local market in place of plain apple butter; applesauce also works if you don’t have apple butter on hand. The apple element keeps the loaf tender and adds a subtle fruitiness that complements the molasses and ginger.
A cream cheese frosting finishes the loaf beautifully—creamy and slightly tangy, it pairs perfectly with the spiced cake.

To garnish, we used the last rosemary sprigs from our outdoor pots to make sugared rosemary and made sugared cranberries for a festive touch. These simple decorations add color, texture, and a hint of herbal aroma that complements the gingerbread spices.
Sugared rosemary and cranberries are easy to prepare and make a pretty, seasonal topping if you plan to serve the loaf at a gathering or give it as a gift.
We used a standard loaf pan for baking and served slices with warm drinks—mugs make it feel extra inviting. This loaf is ideal for serving at holiday breakfasts, afternoon tea, or as a sweet ending to winter dinners.

We’ll definitely make this gingerbread loaf again. If you enjoy spiced cakes with cream cheese frosting and a seasonal presentation, give it a try—it’s simple to prepare and delightfully festive.
