Woodland-Inspired Gluten-Free Vegan Apple Pie Recipe

Hi friends, Courtney here! Over the past year I discovered how much I enjoy baking pies. I baked my very first pie last Thanksgiving and since then pie-making has become a favorite hobby. I’m not a pro, but I love experimenting with different styles and themes. This woodland-themed pie was one of my favorites — cute and fun to make.

I wanted to share it for some fall baking inspiration and a few tips I’ve learned along the way.

I make this pie gluten-free and vegan. The simple pie recipe I follow works well with gluten-free flour—substitute a 1:1 gluten-free baking flour to make it gluten-free.

The crust turns out crisp and delicious. Gluten-free dough can be a little more delicate, so handle it with care and chill the dough when needed. I find small pie crust cutters with plungers especially helpful when working with gluten-free crusts; they make detailed shapes easier to transfer and add pretty embossed patterns. Larger cookie cutters can be trickier to keep intact, so take extra care when lifting and arranging those pieces. A few pie-making tools make the process smoother and more enjoyable.
