I’m probably in the minority, but we’ve cooked every single meal at home for the entire three months of quarantine. Not even takeout—well, except one time my husband picked up four pints of Salt & Straw when he had a craving for ice cream, and we enjoyed every spoonful.
If you’re cooking at home more these days or are looking for healthy recipe ideas, you’ll enjoy today’s post. If you follow my daughter on Instagram, you may have seen her stories where she often shares the tasty food she makes.
She’s vegan and has become quite the chef; I’m always drooling over her colorful, flavorful meals.
I asked Kylee to share a few of her go-to recipes with us on the blog today.
Enjoy (and if you’d like to see more recipe ideas like these, let me know!).
Hi everyone—Kylee here. Below are three healthy, simple recipes I love to make.

Things on Toast: 4 Ways
When you can’t decide which toast to have for lunch, make them all. Bread is a perfect base for so many delicious toppings. I prefer sourdough, but any good bread works. If you’re gluten-free, use your favorite gluten-free loaf—feel free to share recommendations in the comments.
This could easily become a recurring series—the combinations are endless.
- Avocado toast: smash the avocado, drizzle with extra virgin olive oil, a squeeze of lemon, a pinch of chili flakes, and sea salt.
- Chive cream cheese, thinly sliced radish, parsley, and sea salt.
- Cream cheese, tangy kraut, and a sprinkle of hemp seeds for crunch and nutrition.
- Chive cream cheese, heirloom cherry tomatoes, a drizzle of extra virgin olive oil, fresh basil, and cracked pepper.

Stuffed Dates
Stuffed dates are an easy, nutritious snack. There are many ways to fill them, but this combination has been a favorite lately. Dates are ideal because once you split and remove the pit, they create a little pocket for fillings.
I make a batch ahead and keep them refrigerated for a quick, satisfying bite.
Ingredients:
Dried dates
Peanut or almond butter
Cacao nibs
Freeze-dried raspberries, crushed
Flaky Maldon salt (optional)
To assemble: split each date down the middle and remove the pit. Spoon in a little nut butter, then top with cacao nibs and crushed freeze-dried raspberries. Finish with a pinch of flaky salt if you like a salty-sweet contrast.
Enjoy as a healthy snack or small dessert.

Chocolate Almond Butter Smoothie
A smoothie that tastes like dessert but is nourishing and energizing. Maca adds a gentle energy and hormone-balancing support, and cacao brings chocolatey antioxidants and minerals. This recipe makes about two servings.
Ingredients:
3 frozen bananas
1 tablespoon maca powder
1 tablespoon raw cacao nibs
1 tablespoon raw cacao powder
2 tablespoons almond butter
2 pitted dates
About 2 cups nondairy milk (adjust to desired thickness)
Pinch of sea salt
Blend all ingredients until smooth. Optional: top with extra cacao nibs and shredded coconut for texture.
YUM! Thanks for sharing those recipes, Kylee!
