Ingredients:

2 cups oat milk (or your preferred milk)

1 tablespoon pumpkin puree

1 teaspoon pumpkin pie spice

1/2 teaspoon ground cinnamon

A dash of nutmeg

1 teaspoon vanilla extract

Maple syrup or honey to sweeten (optional)

A pinch of sea salt

Directions:

In a small saucepan, warm the oat milk over low heat. Stir in the pumpkin puree, vanilla, pumpkin pie spice, cinnamon, nutmeg, and sea salt. PUMPKIN BANANA MUFFIN RECIPE:

Ingredients:

2 very ripe bananas

1/4 cup butter, melted

1 cup sugar

3/4 cup pumpkin puree

1 egg

1 teaspoon vanilla

1 1/2 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

1 1/2 cups all-purpose flour (or 1:1 gluten-free flour)

1/2 teaspoon salt

1 teaspoon baking soda

Chocolate chips or chunks (optional)

Directions:

Preheat the oven to 425°F (220°C). Line a 12-count muffin tin with paper liners. In a large bowl, mash the bananas, then add the melted butter, sugar, pumpkin puree, egg, vanilla, pumpkin pie spice, and cinnamon. Stir until combined. Add the flour, salt, and baking soda, mixing just until no dry streaks remain. Fold in chocolate chips if using.
