
Are you baking more these days? I know I have been. With summer arriving, I expected the baking pace to slow, but instead I’ve found more joy in spending time in the kitchen. Recently I shared a favorite cookie recipe; today I’m excited to share my go-to gluten-free banana bread. I’ve baked this loaf for years, and after my Hashimoto’s diagnosis I began making it gluten-free by swapping the flour. The result is just as moist and flavorful as the traditional version.

I typically use a 1:1 gluten-free flour blend for this recipe, but it also adapts well to other flours, including grain-free options. If you try a different flour, I’d love to hear how it turns out.

Gluten-Free Chocolate Chip Banana Bread Recipe
Ingredients:
– 1 cup white sugar (or substitute applesauce for a lighter option)
– 1/4 cup butter, softened
– 2 very ripe bananas, mashed (the riper, the better)
– 1 egg, beaten
– 1 1/2 cups flour (I use a 1:1 gluten-free blend)
– 1 tsp baking soda
– 1/4 tsp salt
Optional: chopped walnuts and dark chocolate chips
Directions:
1. Preheat the oven to 325°F (165°C). Grease a loaf pan.
2. In a bowl, cream the softened butter and sugar (or mix in applesauce if using). Stir in the mashed bananas and beaten egg until combined.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the banana mixture and stir until just combined. Fold in chopped walnuts if desired.
4. Pour the batter into the prepared loaf pan. Sprinkle chocolate chips on top if you like extra chocolate.
5. Bake at 325°F for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool slightly before slicing.
