A simmer pot is an easy, natural way to scent your home by simmering water with aromatic ingredients. I included a version of this in my book, where I talk about creating seasonal rituals to make each part of the year feel special. Rather than dreading colder months, I prepare little comforts—simmer pots among them—to bring warmth and pleasure to the season.

Simmer pots are a gentle alternative to artificial fragrances and can boost mood when made with real plant-based ingredients. The act of preparing and enjoying a simmer pot is itself a cozy ritual: it smells wonderful and encourages a slower, more mindful moment in your day.

What to put in a cozy fall simmer pot

There are countless combinations you can use. My favorites include cinnamon sticks, orange and lemon peels, apple slices, cloves, star anise, cranberries, nutmeg, and sprigs of rosemary. Save fruit peels in the freezer and add them whenever you want a simmer pot—this reduces waste and keeps ingredients on hand.

You can also add bits of cedar, pine, or other fragrant wood and greenery for a forest-like scent. A few drops of essential oils can deepen the aroma if you like—orange, cinnamon, or a warming blend work nicely. Use what you enjoy and what you have available; part of the charm is experimenting until you find combinations you love.

To make a simmer pot: place your chosen aromatic items in a pot, add several cups of water, bring to a boil, then reduce to a low simmer. Refill with water as it evaporates and simmer as long as you like. Keep an eye on the pot so it doesn’t run dry.
