Minty Watermelon Lime Popsicle Recipe // yield: approx four 2 oz. popsicles
Ingredients:
- 2 cups 1-inch cubed watermelon
- 2 tbsp fresh-squeezed lime juice
- 6 fresh mint leaves, chopped
- Optional: sweetener to taste (honey, agave, or sugar)
Instructions
- Place the watermelon, lime juice, and chopped mint in a blender.
- Blend briefly until smooth but still slightly textured, or blend longer for a silkier finish.
- Taste and add sweetener if desired; blend briefly to combine.
- Pour the mixture into popsicle molds (about four 2 oz. portions). If you don’t have molds, use small shot glasses or paper cups.
- Insert sticks and freeze until completely solid, usually 4–6 hours or overnight.
- To unmold, run warm water around the outside of the mold for a few seconds and gently pull out the popsicle.
Notes:
These popsicles are a light, refreshing treat with bright watermelon and lime flavor complemented by fresh mint. I made them in 2 oz. shot glasses—cover the glass with foil and poke the stick through the center to keep it upright while freezing. No sweetener is necessary if your watermelon is ripe and sweet, but add a little if you prefer a sweeter pop.
Store leftover popsicles in an airtight container or freezer bag for up to one month. Let them sit at room temperature for a minute before serving for easier removal and softer texture.
