
Truth: I bought an Instant Pot a few years back, but I was nervous about using it and ended up returning it.
Last year my daughters Kylee and Courtney each bought an Instant Pot and loved theirs. Watching their Instagram stories of healthy, easy meals inspired me to try again.
Still, my new Instant Pot sat in the box for months. Change is hard, and I was still a little intimidated.

Finally I asked Kylee to show me how to use it. I recorded her teaching me on my Instagram stories; if you follow me you may have seen those videos. I saved the clips in my story highlights so they’re easy to find. She shared many helpful tips that made the process straightforward.
My first effort was a success: I made black beans. Not fancy, but they turned out great and were far tastier and healthier than canned beans. And yes—nothing exploded!
Next I might try rice, a one-pot meal, or something more adventurous. I’m still a little wary, but rewatching our video and having Kylee available for another lesson gives me confidence to keep experimenting.
