Gluten-Free Vegan Apple Pie Recipe: Flaky Crust & Spiced Filling

Hope you had a wonderful Thanksgiving — we did! Since I began a gluten-free diet some time ago, many of you have asked which gluten-free recipes we enjoy. I wanted to share this beautiful gluten-free, vegan apple pie made by my daughter Courtney and her boyfriend.

Isn’t it absolutely lovely?

The recipe they used is simple and you can find it at Bianca Zapatka’s site (they substituted a gluten-free flour). They used Bob’s Red Mill 1:1 Gluten Free Baking Flour for the crust.

The pie was as delicious as it looked. The crust turned out crispy and flavorful, and the filling was perfectly spiced.

They used small pie crust cutters to shape the decorative leaves on top, which gave the pie a lovely, homemade look.

If you’re looking for more gluten-free, vegan desserts, last Christmas we made gluten-free vegan gingerbread cookies that Courtney and Kylee decorated — they turned out adorable and were a favorite with guests.

Today I’m curled up on the sofa by the new cozy fireplace, wearing comfy pants and feeling very thankful. I love shopping from home instead of facing the crowds, so if you’re doing the same this weekend and want to get some holiday shopping done, I’ve rounded up a few favorite sales to watch for on Black Friday.
