What can you put in a cozy fall simmer pot?

Use what you love. Classic combinations include cinnamon sticks with orange peels, apple slices with clove and nutmeg, or cranberries with star anise. Fresh rosemary or sprigs of cedar add a green, woodsy note. Save fruit peels in the freezer to use later—lemon, orange, and apple peels work well.

You can also experiment with bark, pine, and other fragrant greenery. A few drops of essential oil are optional if you want to enhance the scent; orange, cinnamon, or a seasonal blend work nicely. Keep in mind that essential oils are concentrated—use sparingly.
