PUMPKIN SPICE OAT MILK LATTE RECIPE:

Ingredients:

2 cups oat milk (or your preferred milk)

1 tablespoon pumpkin puree

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

A dash of nutmeg

1 teaspoon vanilla extract

Maple syrup or honey to sweeten (optional)

1 pinch sea salt

Directions:

PUMPKIN BANANA MUFFIN RECIPE:

Ingredients:

2 very ripe bananas

1/4 cup butter, melted

1 cup sugar

3/4 cup pumpkin puree

1 egg

1 teaspoon vanilla extract

1 1/2 teaspoons pumpkin pie spice

1 teaspoon cinnamon

1 1/2 cups all-purpose flour (or 1:1 gluten-free flour)

1/2 teaspoon salt

1 teaspoon baking soda

Chocolate chips or chunks (optional)

Directions:

Preheat the oven to 425°F and line a 12-count muffin tin with liners. In a large bowl, mash the ripe bananas. Add the melted butter, sugar, pumpkin puree, egg, vanilla, pumpkin pie spice, and cinnamon, mixing until combined. Stir in the flour, salt, and baking soda until there are no dry pockets. Fold in chocolate chips if using.

Spoon the batter evenly into the prepared muffin tin and top each muffin with a few extra chocolate chips if desired. Bake at 425°F for 5 minutes, then reduce the oven temperature to 350°F and continue baking for 16–20 minutes, or until a toothpick inserted in the center comes out clean.
