Vegan Home-Cooked Recipes: Delicious Meals You Can Make Today

I’m probably in the minority, but during the three months of quarantine we cooked every single meal at home. We only ordered takeout once—my husband picked up four pints of Salt & Straw ice cream and we enjoyed every spoonful.

I asked Kylee to share a few of her go-to recipes with us on the blog today.

Things on Toast: 4 Ways

When you can’t decide which toast to have for lunch, try them all. Bread is a perfect base for many flavors—sourdough is my favorite, but use whatever you like. If you need gluten-free options, feel free to share your favorite breads in the comments.

This could easily become a recurring series—there are so many combinations to explore.

  1. Avocado toast: smashed avocado with extra virgin olive oil, a squeeze of lemon, chili flakes, and sea salt.
  2. Chive cream cheese, thinly sliced radish, parsley, and sea salt.
  3. Cream cheese topped with tangy kraut and hemp seeds for crunch and flavor.
  4. Chive cream cheese with heirloom cherry tomatoes, a drizzle of extra virgin olive oil, fresh basil, and cracked pepper.

Stuffed Dates

Stuffed dates are an easy, healthy snack. There are many ways to fill them, but this simple version is one of my favorites. Dates are ideal because once split and pitted they form a perfect little pocket.

I often prepare these ahead and keep them chilled for a quick bite.

Ingredients

Dried dates

Peanut or almond butter

Cacao nibs

Freeze-dried raspberries, crushed

Flaky Maldon salt (optional)

To assemble: split each date and remove the pit, spoon in nut butter, then sprinkle cacao nibs and crushed freeze-dried raspberries. Finish with a pinch of flaky salt if you like.

Chocolate Almond Butter Smoothie

A smoothie that tastes like dessert but is nourishing and energizing—yes, please.

Maca is a superfood valued for energy and hormone support and is rich in B, C, and E vitamins. Cacao adds chocolate flavor and provides antioxidants, magnesium, and iron. I add both to many of my smoothies.

Serves 2

Ingredients

3 frozen bananas

1 tablespoon maca powder

1 tablespoon raw cacao nibs

1 tablespoon raw cacao powder

2 tablespoons almond butter

2 pitted dates

About 2 cups nondairy milk (adjust for preferred thickness)

Pinch of sea salt

Blend all ingredients until smooth. Optionally top with extra cacao nibs and shredded coconut.
