
Hope you had a wonderful Thanksgiving! We did. Since I started a gluten-free diet some time ago, many of you have asked about the gluten-free recipes we enjoy. I thought you might like to see this beautiful gluten-free, vegan apple pie my daughter Courtney and her boyfriend made.

The recipe they followed is simple and can be found at Bianca Zapatka’s vegan apple pie page (they used a gluten-free 1:1 baking flour). For this pie they used Bob’s Red Mill 1:1 Gluten Free Baking Flour.
The pie was as tasty as it was pretty. The crust turned out crispy and flavorful.

They used small pie crust cutters to form the decorative leaves on top, which gave the pie a lovely, homemade look.
If you’re after other gluten-free, vegan dessert ideas, last Christmas we made gluten-free vegan gingerbread cookies and Courtney and Kylee decorated them — they turned out adorable and tasted great.
Today I’ll be curled up on the sofa by the new cozy fireplace, wearing comfy pants and feeling very grateful for so many good things.
