
HHello friends! We’ve been tackling a lot of home projects this week (you might have seen the mess on Instagram). Amid the busyness, we treated ourselves to a refreshing, healthy juice. Juicing takes a little time and effort, but the benefits are well worth it.
Previously my girls shared a green juice recipe for St. Patrick’s Day, and this time we wanted to offer a pink alternative. The beet gives this juice a beautiful color, while basil contributes a gentle, aromatic note. Best of all, this juice is delicious—and beets bring great nutritional value, too.

What you’ll need:
3 carrots (regular, not baby carrots)
About 1/2 a peeled beet
4 basil leaves
2 small apples
1/2 a peeled lemon
A juicer (if you don’t have one, any basic household juicer will work)

Directions:
Beets are very healthy but can be messy—take care when handling them to avoid stains.
Wash all produce thoroughly. Slice the apples so they feed easily into your juicer. Begin by juicing the carrots, then the beet. Add the basil leaves just before you put the apples through; this helps ensure the basil is properly extracted. Finally, juice half a peeled lemon. Taste and add additional squeezed lemon if you prefer a brighter, tangier flavor. Stir gently and serve immediately for the freshest taste.
