Each morning after I make my bed I head down the hall to my office — a quiet space where I can close the door, focus on the day’s tasks, and savor a peaceful cup of coffee. Having a dedicated spot to start the day makes morning routines feel intentional and calm.
With fall here, I’m all about pumpkin drinks and treats. I haven’t always loved store-bought pumpkin spice lattes, but after making a pumpkin spice oat milk latte at home, I was hooked. It’s rich, cozy, and far more affordable than buying one on the go.
Below I’m sharing the pumpkin spice oat milk latte recipe and a pumpkin banana muffin recipe that pairs perfectly. Together they give you a comfy café-style fall morning right at home.

Now that I can make my own pumpkin spice lattes and these pumpkin banana muffins, I feel like I’ve recreated the fall café experience at home.
It feels great to save money without giving up the little joys that make fall special.

I know budgets are tight for many of us. Finding quality ingredients at affordable prices helps a lot. Shopping at Walmart offers a range of options — from organic to vegan — that help you enjoy seasonal treats without overspending. Check their private label brands for extra savings.

I also like ordering groceries online to save time. I used Walmart’s Online Grocery service to get the ingredients for these recipes and picked them up curbside. It’s fast, convenient, and keeps errands simple.
If you’re new to online grocery pickup or delivery, look for introductory promos to save on your first orders.

PUMPKIN SPICE OAT MILK LATTE RECIPE:
Ingredients:
2 cups oat milk (or your preferred milk)
1 tablespoon pumpkin puree
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
A dash of nutmeg
1 teaspoon vanilla extract
Maple syrup or honey to sweeten (optional)
A pinch of sea salt
Directions:
Warm the oat milk in a small saucepan over low heat. Stir in the pumpkin puree, vanilla, spices, and sea salt. Let the mixture gently simmer for about 15 minutes, then remove from heat. Store the spiced creamer in an airtight glass jar in the refrigerator for up to five days; shake before using.
Brew a cup of coffee however you prefer and add the desired amount of pumpkin spice creamer. Top with a sprinkle of cinnamon, nutmeg, or pumpkin pie spice if you like. Sip slowly and enjoy the cozy flavors.

PUMPKIN BANANA MUFFIN RECIPE:
Ingredients:
2 very ripe bananas
1/4 cup butter (melted)
1 cup sugar
3/4 cup pumpkin puree
1 egg
1 teaspoon vanilla
1 1/2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1 1/2 cups flour (use a gluten-free 1:1 blend if desired)
1/2 teaspoon salt
1 teaspoon baking soda
Chocolate chips or chunks (optional)
Directions:
Preheat the oven to 425°F and line a 12-cup muffin tin with liners. In a large bowl, mash the ripe bananas. Add melted butter, sugar, pumpkin puree, egg, vanilla, pumpkin pie spice, and cinnamon; mix until combined. Stir in the flour, salt, and baking soda just until no dry streaks remain. Fold in chocolate chips if using.
Divide the batter evenly among the muffin cups and top each with a few extra chocolate chips if desired. Bake at 425°F for 5 minutes, then reduce the oven temperature to 350°F and bake for an additional 16–20 minutes, or until a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and let them cool on a wire rack. Store cooled muffins in an airtight container; lining the container with a paper towel on the bottom and the top can help absorb excess moisture and keep them fresher longer.
Enjoy!
