Minty Watermelon Lime Popsicle Recipe // Yield: about four 2 oz. popsicles
2 cups watermelon, cut into 1-inch cubes
2 tablespoons fresh-squeezed lime juice
6 fresh mint leaves, finely chopped
*Optional: sweetener, to taste (honey, agave, or sugar)
Instructions:
1. Place the watermelon, lime juice, and chopped mint in a blender. Blend until smooth. Taste and add sweetener if desired, blending again to combine.
2. Pour the blended mixture into popsicle molds, small cups, or 2 oz. shot glasses. If you’re using glasses, cover each with foil and insert a popsicle stick through the foil to keep it upright.
3. Freeze until completely solid, at least 4–6 hours or overnight for best results.
4. To unmold, run warm water briefly over the outside of the molds or glasses until the popsicles release easily.
Notes:
This is a simple, fresh, and nutritious fruit popsicle. The recipe makes roughly four small popsicles when using 2 oz. molds or shot glasses. I didn’t add sweetener, because ripe watermelon is naturally sweet, but add a little honey or agave if you prefer a sweeter treat. Using foil to support the sticks works well when you don’t have a mold with built-in holders.
Store popsicles in the freezer in an airtight container or wrapped individually to prevent freezer burn. Let them sit a minute at room temperature before unmolding for easiest removal.
