Gluten-Free Dutch Baby Pancake Recipe for Light, Fluffy Results

Want something delicious for brunch this weekend? Dutch Babies, which we affectionately call “puffs” (puff pancakes), have been our family’s special breakfast for years. They’re simple to make and always feel celebratory.

After being diagnosed with Hashimoto’s and switching to a gluten-free diet, I worried I couldn’t recreate our favorite puff recipe. I’m happy to report that with one easy swap the result is just as satisfying. Below is our updated gluten-free Dutch Baby recipe.

Gluten-Free Dutch Baby Recipe

Butter: 1/3 cup
Eggs: 4
Milk & Flour: 1 cup each (I use Bob’s Red Mill 1:1 gluten-free flour and oat milk)
Vanilla: 1 tsp

Preheat the oven to 425°F. Place the butter in a 3–4 quart ovenproof skillet or pan and put it in the oven to melt while you prepare the batter.

To make the batter, work quickly as the butter melts. Put the eggs in a blender and blend on high for 1 minute. With the motor running, slowly pour in the milk, then gradually add the flour. Continue blending for about 30 seconds until the batter is smooth. Add a teaspoon (or more) of vanilla for extra flavor.

Carefully remove the hot pan from the oven and pour the batter into the melted butter. Return the pan to the oven and bake until the Dutch Baby is puffed and golden, about 20 minutes.

Finish with a squeeze of fresh lemon and a dusting of powdered sugar. Fresh fruit or syrup are optional, but we usually keep it simple so the puff’s light texture shines through.

Switching to gluten-free eating was one of the biggest changes that improved my health. It took some adjustments, but it made a real difference for me.

This year a blood test showed my son and I have a strong autoimmune reaction to eggs. We’ve found suitable egg substitutes for many recipes and haven’t missed them much. I haven’t tested substitutes with this puff recipe yet, but I’ll share an update if I find a great alternative.
