Happy New Year! I was recently invited by Samsung to prepare a Club des Chefs recipe by Eric Frechon, a celebrated three-Michelin-star chef. I’ll admit I felt a little intimidated, but when I learned the recipe was for a chocolate tart I couldn’t wait to try it—because who can resist chocolate?

My daughters and I had a great time making the tart together. It didn’t take long to assemble, though we did have a small mishap with our first homemade crust. Chef Frechon’s advice to use pie weights or beans to keep the crust from slipping is wise—don’t skip that step if you make the crust from scratch. We recovered quickly and the finished tart looked beautiful and tasted even better than we expected.

For a pretty finish, dust the tart with powdered sugar for a snowy look, add a few mint leaves for color, or garnish with berries, whipped cream, or chocolate shavings.

This chocolate tart is straightforward to make and incredibly rich and satisfying. It’s a perfect dessert to bring to a New Year’s gathering—or any occasion—where it’s sure to be a hit.

Crust:

For a quick shortcut, use a quality pre-made pie shell. Bake or prepare according to the package directions if the shell requires prebaking; for a no-bake pie shell follow the package instructions.

Filling:

Melt 10–12 ounces dark chocolate baking chunks (about 67% cacao). Add about 2 tablespoons of butter and stir until melted. Remove from heat and pour in about 10 ounces (300 ml) of heavy cream, stirring until smooth. Pour the chocolate mixture into the prepared crust and chill in the refrigerator for about 30 minutes or until set.

Enjoy your tart chilled or at room temperature. Small variations—such as using different chocolate percentages, adding a pinch of sea salt, or topping with toasted nuts—allow you to tailor the flavor to your taste without changing the simple technique.
