TThis delightful recipe and charming illustration were created by my eldest daughter, Kylee, who is the best cook in our little family. She often brings over creative, flavorful meals that we eagerly enjoy. This particular combination is especially tasty. Kylee says she wouldn’t call herself an “eggplant fanatic,” yet this is one of her favorite dishes. Goat cheese pairs wonderfully with so many things, and it brings a creamy, tangy balance here.
